Caviar is crafted through careful attention to detail, rigorous standards of quality and a passion for excellence. Despite this, many newcomers lack the context to recognize truly sublime caviar in a crowded field of lesser options. For nearly a century, the Petrossian Family has been curating the finest caviar from across the globe and maturing these select batches into a superior grade of caviar. We achieve this rare distinction because we are the only company that works closely with our partner farms, matures our caviar to its peak potential and expertly grades our caviar for sublime taste and texture.

Commonly considered only black, caviar actually comes in many hues ranging from a golden amber to rich, viridian greens. The color varies across each varietal and often helps indicate the quality of the caviar, the age of the sturgeon and even the climate in which they were raised.

Just like their ancestors, the Petrossian Family still tastes and tests our caviar personally. Combining their own experience with time-honored traditions and family secrets, they can ensure that every bead of caviar meets our highest standards.

Today, the world’s best caviar is farmed all across the globe. You are as likely to find an exceptional Osetra in Uruguay as you are in Russia, making it all the more important to diligently seek out the best farms and evaluate them without bias. Petrossian is the only company which actively visits the world’s most prestigious farms. This allows us to discover rare gems and maintain our longstanding relationships with our trusted partners. We are also the only company to work directly with these farms, providing advice and expertise. We are always present for key moments, such as the processing of the sturgeon and the creating of the “mother tins”, 2 kilogram tins which are the core component of the maturation process. By working in tandem with the world’s finest farms, we can ensure that only the world’s best caviar ever makes into a Petrossian tin.

Petrossian is the only company in the world that matures caviar to its peak potential. Because of our trusted clientele across the globe, we can reliably give our eggs the time they need to reach perfection, rather than rushing them to market. The process of maturing caviar can take anywhere from 4-6 months, but the results are astounding. As the eggs “breathe” in the mother tin, they gain greater texture, more nuanced flavor profiles and extend the potency of their finish. This process also allows us to identify truly superior batches, which mature into our Special Reserve Collection.

Lastly, our caviar would never reach our highest standards without the expertise we bring to every batch. From the moment the eggs are harvested, a Petrossian Caviarologist™ is with them, testing for size, taste, texture, favor and finish. Every one of our experts has been rigorously trained by the Petrossian Family, using our century of experience. Despite this abundance of expertise, the Family still tests our caviar personal, in order to maintain consistency and the highest standards of quality. Lastly, we grade our caviar across five levels of brilliance (Classic, Royal, Tsar Imperial, President & Special Reserve). Unlike with our competitors, these levels are objective, meaning we don’t simply divide the caviar into five parts. If no for example, no Alverta meets the Special Reserve standard, then we don’t offer Special Reserve Alverta. Through every step of the process, the Petrossian Family strives to create a consistent standard of excellence, which has earned us our reputation and the love of caviar aficionados around the world for nearly a century.
